Dominio do Bibei Lalume is an exceptional white wine made with the Treixadura variety by the renowned Dominio do Bibei winery, in the prestigious Ribeira Sacra DO.
This winery, founded in 2000 by a group of young winemakers with the vision of highlighting the virtues of the Ribeira Sacra terroir in an authentic way, has the support of Sara Pérez and René Barbier, children of the pioneers of the Priorat renaissance. . Located in the charming town of Langullo, in Orense, the winery is harmoniously integrated into the natural landscape, adopting a fragmented approach based on traditional sloped construction to use gravity as a wine production system.
The vineyards of Dominio do Bibei Lalume, with ages between 10 and 30 years, are located on soils of granite, clay and schist sand, characteristic of the Ribeira Sacra region. The harvest is carried out manually and selectively in small boxes.
In the winery, a meticulous manual selection of clusters and grapes is carried out. Vinification is carried out individually, classifying the grapes by area, soil type and altitude. Depending on their origin, the grapes ferment in different containers, such as barrels, foudres, concrete or stainless steel tanks, at a controlled temperature of between 12 and 17°C. Subsequently, Dominio do Bibei Lalume is aged in stainless steel tanks in contact with its fine lees.
